Williams Brewery / Williams Brooklyn Restaurant is in Kuki in Saitama and it started brewing this year (2022). It’s a few stations past Omiya which is a trek for me but I just fancied going. From the outside it looks like a house or a hotel. There is a sign saying “Lots of Laughs, Williams.” Once you enter, you can see a large room for brewing beer and a restaurant in a bigger stylish room. I only really saw the restaurant but the whole place did have a fun vibe.
There were eight taps, four collaboration beers and four that were completely their own. The collaboration beers were all made by breweries (or bars?) I’d never heard of. The beers also covered some unusual styles. There was no IPA when I visited. There was a DIPA, Sour, Saison. Fruit Ale, Key Lime Pie, Honey Blond Ale and a couple of Hazy IPAs. Like I said, they’ve just started brewing so their beers are still a work in progress but I liked the fact that they were being adventurous with styles and collaborating with small breweries in Saitama. The four Williams beers were ¥1050 for a pint and ¥750 for a half. The collaboration beers were ¥1300 for a pint and ¥800 for a half. There was also a flight of any three beers (not sure about the size) for ¥1700.
The food was American. I had the burger which was good. There were lots of other things on the menu which looked good. There were about four seats at the counter and table seating for about 20 people. There was no charge and no WiFi.
Williams is quite far if you don’t live in Saitama but it’s a fun place for craft beer with American food.

It may be far, but (once again), it is swiftly reachable from central Tokyo via through-running trains on either the Hanzomon or Hibiya Tokyo Metro lines.
Yes it is and it is a place that is worth a little train time to get there anyway.
It is also possible to find their beers on tap at some bars in Tokyo. Scoo in Harajuku had a Williams Beer tap takeover a couple of weeks ago.
